Why is my sourdough starter bubbly but not rising?
Fermentation and rise are two different events. Fermentation is the microbes eating and producing gas — that's the bubbles you see. Rise happens only when the mixture around those bubbles is strong enough to hold them. A thin, watery starter can't do that: the gas bubbles form, float to the surface, and pop without ever inflating the mass. Volume is a texture problem, not a life problem. Cause 1: too watery a starter
The most common cause, and the easiest to fix. Many recipes say "pancake batter" consistency, which is wrong for a rising test — batter can't hold gas. Cut the water in your next feeding so the mixture is a thick paste: roughly 50–55% hydration (100 g flour, 50–55 g water). Within a feeding or two, the same starter that bubbled uselessly will rise.
Cause 2: feeding ratio too large
A 1:5:5 feed floods a small colony of microbes with more food than it can process, so fermentation happens slowly and thinly — bubbles form, but never in enough quantity to push volume. Drop to a 1:1:1 feeding by weight and keep it there for two or three days. Small meals, regularly, build the population that produces a real rise.
Cause 3: a cold environment
Bubbles at a slow simmer, but no rise, is the signature of a cool jar. At 65–70°F (18–21°C) the microbes work, but slowly, and the gas they produce leaks out as fast as it forms. Move the jar to a warm spot at 75–80°F (24–27°C) and the rise usually follows within a day.
