  • 250 g pumpkin puree (not pie filling)
  • 100 g sourdough starter or discard, unfed is fine
  • 200 g all-purpose flour
  • 50 g whole wheat flour
  • 150 g brown sugar, packed
  • 80 g melted butter or oil
  • 2 large eggs (about 100 g)
  • 6 g baking soda
  • 4 g fine sea salt
  • 6 g ground cinnamon
  • 3 g ground ginger
  • 1 g ground nutmeg
  • 5 g vanilla extract

Method

  1. Heat the oven to 350°F (175°C) and grease a 9 x 5 in loaf pan, lining the base with parchment.

  2. Whisk the pumpkin puree, starter or discard, melted butter, eggs, vanilla and brown sugar until smooth.

  3. In a second bowl, whisk the flours, baking soda, salt, cinnamon, ginger and nutmeg. Fold the dry into the wet just until combined.

  4. Scrape into the pan and smooth the top. Bake 50-60 minutes until a skewer comes out with a few moist crumbs and the center reads about 200°F.

  5. Cool in the pan 15 minutes, then lift onto a rack and cool fully before slicing.

Can I use discard instead of active starter?
