Shaping mistakes that flatten a loaf

You can proof perfectly and still bake flat if shaping let the dough down. Two errors cover it: degassing the dough too hard right before shaping, and failing to build surface tension. A preshape, a 20-minute rest, then a tight final shape gives the loaf structure to stand up in the oven. Dead oven spring and wrong oven temperature
